The Green Light — Ethiopia Sidama | Light Roast
Sweet Cherry · Honey · Milk Chocolate | Smooth · Comforting · Light
The Green Light is our everyday companion — a light roast sourced from the Sidama region of Ethiopia, one of the most celebrated coffee-growing zones in the world. Sidama coffees are known for their vibrant, fruit-forward character and silky body, and this one carries every bit of that heritage in the cup. Expect a soft sweetness that opens with sweet cherry, moves through a honeyed mid-palate, and finishes with a smooth, creamy hint of milk chocolate. No bite, no bitterness — just comfort.
A light roast rewards patience. Lower brew temperatures and a slower pour unlock the honey and cherry notes that make this bean so special.

Pour Over (V60 or Chemex) — Our Top Pick
- Grind: Medium-fine
- Ratio: 1:15 — 20g coffee / 300g water
- Water temp: 90–92°C (194–198°F) — lower temps protect the sweetness on a light roast
- Bloom 45 seconds with 50g water, then pour in slow, steady circles
- The honey and cherry notes shine brightest with this method
Aeropress
- 15g coffee / 220g water at 90°C
- Inverted method, 2-minute steep, slow press
- Produces a clean, low-acid cup — exceptional as an iced coffee base
Espresso
- Dose: 18g in / 36g out
- Time: 28–32 seconds (pull slightly longer than usual for a light roast)
- Temp: 93°C — expect a sweeter, lighter shot than you might be used to
The Gatsby Reserve — Daisy Edition | Nicaragua | Medium Roast

The Gatsby Reserve Daisy Edition is our showpiece. A medium roast from Nicaragua, this bean is crafted for the moments that deserve something special. It leans into depth and elegance — complex enough to reward a slow brew, approachable enough to enjoy every single morning. Dark chocolate on the nose, toasted almond through the body, and a bright pop of cherry on the finish. It's a balanced, structured cup that lingers in all the right ways.
The Daisy Edition is one of those beans that keeps giving. Let it rest 7–10 days post-roast and it will reward you with layers you didn't expect.

Pour Over (V60) — Our Top Pick
- Grind: Medium
- Ratio: 1:16 — 19g coffee / 300g water
- Water temp: 94°C (201°F)
- Extended bloom — 45 seconds with 55g water
- Pour slowly and deliberately; the almond and cherry notes emerge as it cools slightly
French Press
- Grind: Coarse — ratio 1:14
- 4-minute steep, gentle plunge
- Brings out the full, velvety body — the dark chocolate note is richest here
Cold Brew
- Grind: Coarse, 1:8 ratio (concentrate)
- Steep 18–20 hours in the fridge
- Dilute 1:1 to serve
- The Daisy Edition's cherry brightness comes alive when served cold — one of the best cold brews you'll make
Espresso
- Dose: 18g in / 36g out
- Time: 27–30 seconds
- Temp: 93°C
- A rich, structured shot with a dark chocolate finish — outstanding as the base for a latte
A Note on Freshness
Both beans are best brewed within 2–4 weeks of the roast date. For the Gatsby Reserve Daisy Edition specifically, we recommend waiting 7–10 days post-roast before your first brew — give it time to degas and fully develop. The wait is worth it. Store both bags in a cool, dry place away from direct sunlight, and keep the zipper sealed between uses.
